Apple & Sage Pork Breakfast Sausages

SURPRISE! Another apple recipe! All jokes aside though, this may be the last for a while, because I think I’m finally ready to start posting pumpkin recipes next week! I’ve mentioned it before, but I LOVE breakfast. In my opinion, it’s the best meal of the day. So anytime I can incorporate seasonal recipes into my breakfast, I’m on board. These breakfast sausages are just as good a day or two after they’ve been made, making them perfect for meal prep!
These breakfast sausages are SO easy to make, only require a handful of ingredients AND they’re paleo so they’re gluten-free, dairy-free, and also happen to be nut-free. Literally, everyone can enjoy this recipe. The apple pairs so beautifully with the pork (one of my favorite combinations) and the sage really brings this recipe home.
I’m also all about easy recipes and meal prep right now, because I am doing a practicum placement for my Master’s program, working my job still, TAing a course, and taking another course for school. All in all, I’ve signed up for about 50+ hours of actual work each week plus homework on top of that. Is it bad that I’m already counting down the days until Christmas (and holiday baking)?
What do you need to make these apple & sage pork breakfast sausages?
- Ground pork – we get all of our meat from Trulocal!
- Avocado oil – we always use Chosen Foods
- Apple – we get all of our produce at Farm Boy
- Sage
- Tapioca flour – we always use Bob’s Redmill
- Sea salt
- Pepper
- Garlic powder – we use Simply Organic for all of our spices
- Onion powder
- Cinnamon

Ingredients:
- 1 lb ground pork
- 1 tablespoon of avocado oil (plus more for cooking)
- 1 medium apple, cored and shredded *see notes
- 1 tablespoon of freshly chopped sage
- 1/2 tablespoon of tapioca flour
- 1 teaspoon sea salt
- 1/2 teaspoon pepper
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon cinnamon
Instructions:
Step 1:
Prepare a baking sheet with parchment paper and set aside. In a large bowl, combine all of the sausage ingredients and mix well using your hands.
Step 2:
Form the mixture into the sausage patties using about 1/4 cup of mixture per sausage. Place the formed sausages on the prepared baking sheet. If you have time, pop the baking sheet in your freezer for 15 minutes to let the patties come together/form so it’s easier for cooking. This is optional and won’t impact the final product.
Step 3:
Heat a large frying pan (we use our cast iron skillet) over medium heat and place about 1 tablespoon of oil in the pan. Once hot, place half of your sausages in the pan (ensuring you have enough room between sausages, they shouldn’t be touching and will likely need to be cooked in batches). Cook for 5 minutes, flip, and cook for another 5 minutes on the second side. Sausages are done when they reach an internal temperature of 165 degrees. Serve immediately or store in the refrigerator for up to 5 days. Enjoy!
Notes:
- I didn’t both to peel my apple because I used my food processor to shred it. You can peel if you prefer
- You can freeze these sausages for up to 3 months
