Easy BBQ Chicken Meatballs

It has been SO long since I posted a savory recipe. I love barbecue sauce, it’s probably my favorite condiment, which is why I absolutely LOVE these meatballs. They’re also very easy to make, so they’re perfect for a busy weeknight dinner. I like to make a big batch of them on Sunday, and then eat them for lunches and dinners throughout the week. They’re the perfect meal-prep recipe! You can also pair them with almost anything, for a delicious meal. We like to eat these with sweet potato fries, white rice, or a stir fry!

This recipe is also perfect when you’re craving something barbecue but don’t have the time to actually barbecue something. You can use your favorite pre-made barbecue sauce or homemade sauce for this recipe, and the results are prefect each time! For this recipe, I used Good Food for Good Paleo BBQ Sauce that I got from NaturaMarket! It’s one of my favorite barbecue sauces because it has a great taste AND I don’t have to worry about any of the ingredients in it. We also used ground chicken from our TruLocal box!

What do you need to make these easy BBQ chicken meatballs?

Servings:

25-30 meatballs

20 minutes

30 minutes

Ingredients:

  • 2 pounds of ground chicken
  • 1 teaspoon of apple cider vinegar
  • 2 cloves of garlic, minced
  • 1/4 cup of green onions, thinly sliced
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried parsley
  • 1 teaspoon of onion powder
  • 1 teaspoon of paprika
  • 1 teaspoon of sea salt
  • 1/2 teaspoon of black pepper
  • 1/2 cup of almond flour
  • 1/4 cup of tapioca flour
  • 3 tablespoons of your favorite BBQ sauce + more for tossing the finished meatballs in
  • 2 eggs

Instructions:

Step 1:

Preheat the oven to 425 degrees and prepare a large baking sheet with parchment paper. Set aside.

Step 2:

In a large bowl, mix all of the ingredients together until they are well incorporated. Scoop approximately 2 tablespoon sized meatballs and roll them together in your hands to properly form them, then place them on the prepared baking sheet.

Step 3:

Bake the meatballs for about 20 minutes, or until a meat thermometer reads 165 degrees. Remove the meatballs from the oven, place them in a large mixing bowl and drizzle your favorite BBQ sauce over them, tossing them until they are completely coated.

Step 4:

Serve with your favorite sides and store the leftovers in the refrigerator for up to 4 days. Enjoy!

Notes:
  1. These meatballs freeze well. Just make sure you freeze them before coating them in BBQ sauce. Once ready to eat, thaw them and then coat them in sauce.
