Easy & Healthy Pumpkin Spice Latte

Okay. This recipe is SO easy. So, this posting is going to be short and sweet. If you love going to a coffee shop and getting a pumpkin spice latte in the fall, you can now make one at home yourself! What’s great about that is that you know it won’t be filled with all the processed sugars and other garbage that tend to be in the ones you buy, even if they are delicious.
This pumpkin spice latte has real pumpkin in it, and is only sweetened with maple syrup, so it’s free of refined sugars. The recipe calls for 1 cup of brewed coffee, but you could always swap this out for your preferred amount of espresso as well if that what you prefer! I am not a big coffee fan, I usually just stick with teas. However, Kai has asked me to make this recipe for him a few times now because he enjoyed it that much, and he is usually just a black coffee guy. I’ll admit, I thought it was pretty tasty too!
What do you need to make this pumpkin spice latte?
- Brewed coffee
- Dairy-free milk – I used oat milk because it keeps it nut-free AND I find it’s creamier without any kind of aftertaste (sorry almond milk)
- Pumpkin puree
- Maple syrup – 100% honestly, we always use the Kirkland brand because you just cannot beat this deal for 100% pure maple syrup
- Vanilla – we use Simply Organic
- Cinnamon – we use Simply Organic for all of our spices
- Pumpkin pie spice – if I don’t mix up my own, I use Splendor Garden
- Optional: whipped cream

Ingredients:
- 1 cup of brewed coffee
- 1/2 cup dairy-free milk
- 1/4 cup pumpkin puree
- 1/2 teaspoon of pumpkin pie spice
- 1/8 teaspoon of cinnamon
- 1 teaspoon of vanilla
- 2 teaspoons of maple syrup – feel free to add more to adjust for your desired level of sweetness
- optional: whipped cream
Instructions:
Step 1:
In a medium sized pot, whisk together all of your ingredients (except for the brewed coffee). I use a handheld frother for this. Place the mixture over medium heat until the mixture just starts to simmer, mixing frequently.
Step 2:
Remove from heat and pour into a container you can use a handheld frother to semi froth the pumpkin mixture in. If you don’t have a handheld frother, just whisk vigorously for 1-2 minutes.
Step 3:
Pour your brewed coffee into a large mug, pour the frothy pumpkin mixure on top, and top with whipped cream if desired. Enjoy!
Notes:
- Any dairy-free milk will work just fine
- The pumpkin mixture doesn’t get too frothy on its own, but you should notice a difference if you use a handheld frother
- Feel free to use your favorite coffee, or espresso
