Gluten-Free Apple Cinnamon Baked Oatmeal

It’s Monday again already! But I have something to chase those blues away. This quick and easy breakfast is full of all your favorite fall flavors! Apple and cinnamon is a winning combination no matter what, and it works perfectly in this baked oatmeal!

You can eat this on its own, OR topped with your traditional oatmeal toppings like cinnamon, sugar, chopped walnuts, or topped with a small amount of milk!

One of the best things about this recipe, is that you just pop it in the oven! It requires very little prep or clean-up AND you can make it ahead of time to meal prep some of your breakfasts for the week! We went to an event last night about 35 minutes away, where they have all kinds of pumpkin sculptures and other Halloween-themed art, and didn’t get home until well past midnight. So I’m pretty happy to have this already prepped in my fridge right now!

We don’t eat oatmeal as often as we used to, and Kai said he was going to just try a small bite. Over the course of 30 minutes he ate 1/4 of the tray, so I think he’s remembering how much he enjoys oatmeal!

What do I need to make this gluten-free apple cinnamon baked oatmeal?

30-35 minutes

Total Time:

40-45 minutes

Ingredients:

  • 2 cups of old-fashioned rolled oats
  • 2 teaspoons of cinnamon
  • 1/4 teaspoon of nutmeg
  • 1/2 teaspoon of sea salt
  • 1/3 cup of maple syrup
  • 1 apple, peeled and diced – I used gala
  • 1 teaspoon of vanilla
  • 2 eggs
  • 2/3 cups of dairy free milk of your choice – I used coconut to keep it nut free
  • 3 tablespoons of coconut oil, melted and slightly cooled

Instructions:

Step 1

Preheat oven to 350 degrees. Line an 8×8 pan with parchment paper and set aside

Step 2

In a large bowl, stir together the oats, cinnamon, nutmeg, and sea salt and set aside

Step 3

In a medium sized bowl, whisk together the eggs, maple syrup, vanilla, dairy free milk and coconut oil

Step 4

In a medium sized bowl, whisk together the eggs, maple syrup, vanilla, dairy free milk and coconut oil

Step 5

Right before adding the wet ingredients to the dry ingredients, toss the peeled/diced apples in the dry mixture so that they will get covered in cinnamon and nutmeg. Then mix in the wet ingredients until combined

Step 6

Pour the oatmeal mixture into the prepare pan and bake for 30-35 minutes, or until edges and top are lightly golden brown and a fork comes out clean when inserted into the middle

Step 7

Allow oatmeal to cool in the pan for 2-3 minutes before cutting and serving!

Notes:
  1. Make sure your oats are gluten-free if you are gluten sensitive!
  2. You can use any plant based milk you like. Regular milk would also work!
