Total Time:
2 hours 10 minutes
Ingredients:
- 1 cup runny tahini
- 1/2 cup melted coconut oil, cooled slightly
- 1/2 cup maple syrup
- 4 tablespoons dairy-free milk
- 2 1/2 cups old-fashioned rolled oats (NOT QUICK COOKING)
- 6 tablespoons cocoa powder
- pinch of sea salt
- 2 teaspoons of vanilla
- topping: 1 1/3 cups of chocolate chips/chunks + 2 tablespoons of tahini
- optional: extra tahini to swirl into chocolate topping
Instructions:
Step 1:
Line an 8×8 brownie pan with parchment paper and set aside.
Step 2:
In a large bowl, mix together the oats, sea salt, and cocoa powder. Set aside.
Step 3:
In a microwavable bowl, mix together the tahini, maple syrup, dairy-free milk, and microwave for approximately 30 seconds – 1 minute, until all ingredients are warm and able to mix together into a smooth mixture. Whisk in the vanilla and melted coconut oil.
Step 4:
Add the melted tahini mixture to the oat mixture, and mix until well combined. Press the oat mixture into the prepare brownie pan so it forms an even layer. Set aside while preparing the chocolate layer.
Step 5:
Microwave the chocolate and tahini in a microwave safe bowl in 30 second increments (stirring in between) until the mixture is completely smooth. Spread the chocolate mixture evenly over the oat layer. Optional: melt a tablespoon or two of tahini for 10-20 seconds and drizzle over chocolate layer and swirl. Place bars in the refrigerator for at least 2 hours to set.
Step 6:
Once set, remove the bars from the baking dish, cut into approximately 16 pieces, and keep them in a sealed container in the refrigerator for up to 10 days. Enjoy!
Notes:
- By 2 hours, the bars should be firm enough to slice into, unless your microwaved tahini mixture was quite hot when you mixed it with your oats. If you are unsure, leave for 4 hours or overnight before cutting into bars.
- These bars can also be frozen for up to 3 months!
