Paleo Lemon Dill Dressing

This recipe has quickly turned into our favorite salad dressing of all time. It was actually an accident that it was made. I had a lot of dill in our garden and decided to try to make a dressing of sorts. The first batch turned out amazingly! But I just eyeballed the ingredients, so I didn’t have a firm recipe that I had used. I then spent the rest of the summer trying to replicate the initial recipe, with little success until NOW! I finally recreated my original dressing recipe, and it’s really fantastic!

While trying to recreate my initial recipe, I had a lot of issues with the quantity of the ingredients I was using. Multiple batches had waaaay too much Dijon, or dill, and not enough honey to balance out the tartness of the lemon juice. BUT, I am happy to say that the recipe is back and I’ve actually written it down this time. Lesson learned.

Kai actually requested this dressing all summer long for every salad that we ate, so I am so happy I was able to figure out the initial recipe before fall actually starts! I don’t know about you, but even if the mornings/evenings are starting to get a little more cool, the afternoons are still super warm and I am not ready to sit down with a hardy bowl of anything yet for dinner.

Servings:

1 cup of dressing

Ingredients:

  • 1/4 cup fresh lemon juice
  • 2 tablespoons of dijon mustard
  • 2 tablespoons of honey
  • 3 cloves of minced garlic
  • 1 tablespoon of fresh dill, finely chopped
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/2 cup avocado oil

Instructions:

Step 1

Place lemon juice, Dijon, honey, garlic, dill, sea salt, and black pepper into a mason jar or bowl, mix until well combine. Gradually whisk in the avocado oil until completely combined

Step 2

Store dressing in an airtight container in the refrigerator until ready to use!

Notes:
  • Dressing should stay fresh in the refrigerator for up to 2 weeks
