This recipe is perfect for summer as it requires minimal baking – with just a few minutes in front of the stove for the curd – and uses simple ingredients, making it paleo, gluten-free, and dairy-free, so everyone can enjoy!
Not only is this recipe easy to follow, but it uses very simple ingredients! Time to dust off that bag of chia seeds you’ve had sitting in your cupboard and make this delicious dessert!
This dessert has creamy chia pudding on the bottom, and is topped with lemon curd that is filled with healthy fats, sweetened only with honey.
WHAT INGREDIENTS DO I NEED TO MAKE THIS LEMON PIE CHIA PUDDING?
For the lemon curd:
For the chia pudding:
- Chia seeds
- Plant based milk – we use coconut to keep it nut free
- Maple syrup
- Vanilla
- Lemon zest

Ingredients:
Lemon Curd:
- 1/2 cup of freshly squeezed lemon juice
- Zest from 2 lemons
- 1/3 cup raw honey
- 1 whole egg + 3 yolks, whisked well
- 6 tablespoons of grass-fed ghee
- 1/8 teaspoon of turmeric
Chia Pudding:
- 1/4 cup of chia seeds
- 1 cup of plant based milk
- 1 tablespoon of maple syrup
- 1/2 teaspoon of vanilla extract
- Zest from 1 lemon
Instructions:
Step 1
Lemon Curd:
Place lemon juice, zest, honey, and turmeric into a small-medium sized pot and whisk together well
Step 2
Add egg + yolks (previously whisked well) to the pot
Step 3
Place the pot on the stove over low-medium heat and add 6 tablespoons of ghee to the pot
Step 4
Stir the mixture constantly while ghee is melting, this will take a few minutes
Step 5
Once the ghee has completely melted, you should have a very smooth (but thin) mixture. Increase heat to medium and continue to stir
Step 6
After approximately 5-7 minutes, your mixture should begin to bubble and thicken. Remove the pot from heat and place curd into an uncovered container to cool to room temperature before refrigerating
Step 7
The lemon curd should chill for 4 hours (or over-night) before serving
Step 8
Chia Pudding:
Place all of the ingredients for the chia pudding into a bowl and mix well so that all chia seeds are incorporated into the mix
Step 9
Place mixture into the refrigerator to chill for 4 hours (or over-night) to set before serving
Serving
Place some of the pudding into a bowl and top with the lemon curd and enjoy!
Notes:
- You can substitute coconut oil for ghee if you don’t have any on hand, and you’ll get very similar results (use refined coconut oil if you’re looking for avoid a coconut flavor)
- Black or white chia seeds will work for this recipe
- We use unsweetened coconut milk for our plant based milk to keep the recipe nut free
- The turmeric is optional, but will yield a brighter/more rich color curd
- Both the lemon curd and pudding are best if eaten within the first 3-4 days after making!
