Hello everyone! We are back from vacation (sadly) but I am loving the fall feel the weather has! It’s been nice the last few days not having a crazy humidex that makes you want to stay inside all day long. The mornings and evenings are starting to get cooler, and with that comes FALL RECIPES! Arguably some of the best recipes there are (except minus Christmas recipes)!
This recipe is completely vegan, as it’s sweetened only with maple syrup and it’s gluten-free! I used dried apple rings to give this recipe the perfect fall flavor. Honestly, this recipe is the perfect granola recipe any time of year, because who doesn’t love the combination of apples and cinnamon! I can only compare the flavor to apple crisp, but in granola form. Sounds amazing, right?
What do you need to make this apple cinnamon granola?
- Old fashion rolled oats NOT quick oats! – We use Bob’s Redmill
- Coconut oil – we use Nutiva
- Ground flaxseed
- Sea salt
- Cinnamon – we use Simply Organic for all of our spices
- Nutmeg
- Maple syrup
- Almond butter – we use Nuts to You Nut Butter, but you could substitute for your favorite seed butter if nuts are an issue!
- Vanilla
- Dried apple rings – we get ours from Bulk Barn

Ingredients:
- 2 1/2 cups of old fashioned rolled oats *NOT quick cooking oats or steel cut oats
- 1/2 cup of ground flaxseed
- 1/2 teaspoon sea salt
- 2 teaspoons of cinnamon
- 1/8 teaspoon of nutmeg
- 1/3 cup of maple syrup
- 1/2 cup of almond butter
- 1/4 cup of coconut oil
- 1 teaspoon of vanilla
- 1 cup of dried apple rings, chopped
Instructions:
Step 1:
Preheat the oven to 325 degrees, and line a large baking sheet with parchment paper. Set aside.
Step 2:
In a large bowl, whisk together all of the dry ingredients: oats, flaxseed, sea salt, cinnamon, and nutmeg. Set aside.
Step 3:
In a medium sized saucepan, mix together the maple syrup, almond butter, and coconut oil over medium-low heat until all ingredients are whisked into a smooth mixture. Remove from heat and whisk in the vanilla.
Step 4:
Fold the wet ingredients into the dry ingredients until all of the oats are completed coated. Gently fold in the dried apple chunks.
Step 5:
Pour the granola mixture onto the prepared baking sheet and using your hands, or the back of a wooden spoon, spread the mixture into one even layer. Bake in the oven for 25-30 minutes. Remove the baking sheet from the oven and place on a wire cooling rack. Leave to cool on the pan for 30 minutes before removing to a storage container (this will help get those giant clusters!).
Step 6:
The granola can be broken into as large or small pieces as you like once cooled, and stored in an airtight container at room temperature for up to 2 weeks. Enjoy!
Notes:
- You should be able to swap the almond butter for any other nut or seed butter and still have delicious results!
